Last Thursday, our very own Boringdon Gin was distilled on the grounds with Cosmo and his team from local artisan distiller, Still On The Move.
The whole process took around six hours from lighting the Still to bottling up and it was a rather beautiful setting on a gorgeous September day.
The process started by putting 100L of neutral grain spirit in the big pot part of the Still. Seven botanicals for the Gin were chosen by Head Chef Scott Paton. They chosen botanicals: Elderflower, Juniper, Angelica, Pink Pepper, Fennel, Orange Peel and Pink Grapefruit.
“Many of the botanicals we chose to flavour the Gin are grown on the grounds in our herb garden. The Grapefruit, Pink Pepper and Fennel are also used in our Gaia Awakening blend which runs through the Spatisserie menu. We’re really pleased with the final product and look forward to our guest’s trying it!”
The botanicals were prepared and added to the basket which is the second part of the Still. Underneath the Still is a burner which is lit, and this starts to heat the liquid until it became a vapour. The vapour gathers in the chamber above the liquid and is then pushed through the botanicals chamber. Here is where it starts to take on the flavours of the botanicals. When spirit is distilled there are the heads, the initial part of the distillation, the hearts, and the tails. Still On The Move only use the hearts to make their Gin.
At the end of the process, 70 bottles of Boringdon Gin were bottled up and labelled.

Sourcing local spirits, beers and ales is extremely important to us here at Boringdon Hall and you can’t get much more local than the front lawn. We think our guests are going to love the delicious Grapefruit flavours coming through, followed by Juniper and then the sweetness of the Pepper.”
The Boringdon Gin will be our new house gin and we look forward to pairing it with Fever Tree and Pink Grapefruit & orange zest.
